Raw Superfood Truffles

These superfood truffles are loaded with antioxidants and heart-healthy fats. Cacao is a rock star antioxidant and is off the charts in magnesium. Maca is a Peruvian darling most noted as an energy food, while South American mesquite is high in protein and soluble fiber. If you’re new to superfoods, this sweet treat is great place to start.

(Makes about two dozen)

1 cup cacao butter
½ cup coconut oil
1 teaspoon vanilla extract

Place ingredients in a bowl metal bowl. Place bowl over pan with gently boiling water to liquefy. While softening, prepare remaining ingredients.

1 cup cacao powder
1 tablespoon maca powder
½ tablespoon mesquite powder
1 teaspoon maqui powder
½ teaspoon salt

¾ cup medjool dates, pitted

Toss dry ingredients in a high-powered blender and give a quick whirl to mix. Pour in oils and continue to blend.  Gradually add dates, blending until smooth.

Pour into a bowl and pop in fridge to cool, about 15-30 minutes. When mixture is firm enough to scoop, use a teaspoon to portion.  Form into small balls and roll in desired coating. Be creative and have fun, the options are endless!

Note: Pictured truffles were rolled in ground cacao nibs and unsweetened coconut.
